Chinese Chicken Salad - Serves 2
Ingredients
1 TBSP Soy Sauce (or Wheat Free Tamari)
½ tsp five spice powder
1½ TBSP Extra Virgin Olive Oil
½ TBSP Red Wine Vinegar
75g Bean Sprouts
300g Roasted Chicken Pieces
Pinch Sea Salt + Freshly Ground Black Peppercorns
175g Sliced Chinese Cabbage
4 Tangerines, Lge Mandarins or Oranges peeled + segmented
Method
Heat oven to 180 ° C. Roast chicken on baking tray until well cooked.
In a medium sized bowl- mix soy sauce, five spice powder, oil + vinegar.
Add the bean sprouts and chicken + toss well. Add salt + pepper to taste.
Slice cabbage and place on 2 plates. Spoon chicken mix on top.
Add citrus segments to top.
