Grilled Pink Grapefruit with Peach Ricotta Cream - 4 Serves
Ingredients
2 pink grapefruit, halved
2 tsp honey or 2 tsp perfect sweet or 1 tsp stevia powder
1 fresh peach or 1 cup peaches in natural juice (drained)
2 cups low fat ricotta, vanilla silken tofu or low fat vanilla yoghurt
1 TBSP blueberries or 4 strawberries + sprig mint leaves to decorate 1 TBSP Isowhey or Ketoslim protein powder
Plus dash of extra virgin live oil for cooking
METHOD
Preheat Grill or BBQ Plate.
Carefully cut flesh from skin of grapefruit keeping skin intact in halves.
Segment grapefruit + insert back into skin halves.
Sprinkle with honey or perfect sweet. Grill for 2-3 minutes until caramelised.
Peel + cut peach.
Add peach + ricotta (or tofu/yoghurt) to blender + blend til smooth + creamy.
Divide mix between the 4 grapefruit halves. Top each with berries + mint leaf.
