Immune Booster Soup - Serves 4

Ingredients
8 dried Shitake Mushrooms
6 cups Chicken Stock
4 cloves garlic, chopped
2 TBSP ginger, grated
1 onion diced
1 chicken breast, diced
½ cup White Miso Paste
½ cup spring onions
½ cup fresh parsley, finely chopped
½ cup fresh basil, finely chopped

Method
Soak mushrooms in a cup of boiled water for 10 minutes, whilst chop veges.
In a medium pot add the stock, garlic, ginger, onion, chicken, miso + spring onions.
Bring to boil then simmer for 10 minutes.
Slice mushrooms + add with their soaking liquid + simmer for a further 3 mins.
Place in warmed bowls + sprinkle with basil + parsley.
