Tomato Frittata - 2 Serves
Ingredients
2 whole eggs
6 egg whites
1 medium roma tomato cubed
1 tsp dried thyme (or Italian herbs)
50g fresh parsley torn into bite size pieces
Sea salt and ground pepper
6 TBSP grated low fat cheddar (see our tip) GRATED
Plus dash of extra virgin live oil for cooking
METHOD
Separate 6 eggs. In a bowl, lightly beat the egg whites with 2 whole eggs.
Add tomato, thyme, parsley, salt + pepper. Grate cheese.
Heat a 20-23cm pan over medium heat, add olive oil to coat base of pan + heat.
Pour egg mix into pan, spread to cover pan thinly. Leave to set on bottom for 1 min.
Sprinkle cheese on top. Turn heat to low, cover with lid, cook for 10 mins or til set.
Alternatively place in oven or under griller to brown the top.
